Tasting notes:

Cornish Pastis is a modern take on the French anise classic, and the first of its kind to be created in the UK. The spirit is a powerful mix of aroms and flavours, with spicy aniseed, liquorice, orange and lemon zest with more delicate floral notes. 

About the Pastis:

The Cornish Pastis is made from a mix of botanicals from around the world. Aniseed and sweet fennel seeds come from Turkey, Star Anise comes from China, the liquorice root comes from Uzbekistan. Angelica root comes from Poland, Orris from Morocco, green cardamom seeds come from Guatemala. Juniper comes from Kosovo and cinnamon from Madagascar and finally foraged gorse flowers from nearby cliffs in Cornwall. 

The citrus notes come from fresh fruits zests of sweet orange, lemon and grapefruit from wherever they are in season. 

About the Producer:

Tarquin aims to take spirit making back to basics, making quality spirits using traditional techniques and equipment; and only the highest quality ingredients.

Their copper pot still is fired by flames and judged by eye. All their botanicals are slected by sight and feel. All their bottles are indivifually filled, corked, sealed, labled, numbered and waxed by hand. 

And of course all their spirits are rigourously tested by nose and taste. Tough job!

Each batch of Pastis made is fewer than 600 bottles ensuring total quality control and care of each batch. The water used for each blending is sourced locally from Boscastle and some of the freshest in the UK.
