Tasting notes:

Lovely pale gold and gentle, fine bubbles. Toasty, spicy and complex aromas showing wonderful development after extended ageing in Nyetimber's cellar. The palate supports these complex aromas with honey, almond, pastry and baked apple flavours. Very fine and elegant with a great combination of intensity, delicacy and length.

About the wine:

Nyetimber uses only grapes from its own vineyards, each of which was deliberately selected to be south-facing with greensand and chalk soils. All Nyetimber vineyards are located in the lee of the South Downs which affords them shelter from the coastal winds. 

Prior to harvest, the grapes are tasted to ensure the best flavour development before picking. Every single grape is picked by hand at the optimal time, a decision that is made on a parcel by parcel basis.

Each vineyard parcel is treated uniquely, from picking to gently pressing to vinification in separate tanks. 

Such attention to detail allows for a wonderful diversity of base wines when blending decisions are made. All wines are crafted according to the strict rules of the traditional method, aged for extended periods of time on the lees and given sufficient post-disgorgement time before release.

About the producer:

Nyetimber Manor dates back to medieval times, referred to in the Domesday book in 1086. The present Nyetimber estate story though starts in 1988 when Estate and manor were bought by Stuart and Sandy Moss, vines were planted transforming the estate from a farm to a Vineyard.

The present owner, Eric Heerema purchased Nyetimber is 1996 and since then has grown from 34 acres under vine to 400 acres. To support the growth there has been significant investment in modern winemaking technology and the bringing together of a world class team of staff. 

Nyetimber was the first English wine producer to use the classic varietals of Champagne, Chardonnay, Pinot Noir and Pinot Meunier and are the only English sparkling wine producer to use grapes solely from their own vineyards and age their wines for an extended period. The wines are only released when they have reahced their peak.

The Nyetimber Classic Cuvee Multi Vintage is an ideal alternative to Champagne. Drink this to celebrate, for an occasion and if you wanted to match it with food, it is suprisingly versatile. Try it with hard cheeses, light fish dishes, or spray it over a crowd after a Grand Prix Victory.
