Tasting notes:

The Novas Gran Reserva Chardonnay is a clear firm yellow in colour.

The nose is combination of rich citrus fruits, lemon peel, grapefruit and some tropical pineapple with an underlying minerality and a lovely note of nutty vanilla.

The palate is very fruity, but not to the detriment of the texture. The sharper citrus fruits permeate, with lemon, grapefruit and some orange coming through. The fruits are countered by soft vanilla, firm acidity and mineral stoney qualities. There is a very fine almost savoury tinge as well, combining with the acidity to give the wine a refreshing quality hard to match with this much fruit.

About the wine:

The Novas Gran Reserva Chardonnay is grown in the Casablanca valley in Chile. The climate is cooled by influence of the Pacific and the Humboldt current. This also gives the climate constant levels of humidity and average temperatures ranging from 14°c in the winter to 25°c in the summer. This lower temperature allows a longer slower ripening period for the grapes, to fully develop their rich flavours and aromas.

The Chardonnay vines are grown on poor sandy loam soils of alluvial origin, relatively shallow and permeable. This means lower yield from the vine but the grpaes that do grow take on the full mineral qualities of the soils. 

The grapes are harvested by hand in the last two weeks of April, when the grapes have reached the desired level of maturity. After harvest, the vinification takes place in a mixture of oak and stainless steel, using selected yeasts, temperature controlled fermentation, gentle lees stirring and pump over.

Half of the finished wine is aged for 5 months in French oak barrels, the remainder is aged for 5 months in stainless steel. Prior to bottling, the wine was lightly fined with bentonite and cold stabilized to prevent tartaric precipitations.

Their spectacular Biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from around the word. Owner Jose Guilsasti and winemaker Alvaro Espinosa enlisted a wealth of young talent to establish this project, the results of this care and attention showing in the innovative wines they produce.
