Tasting Note:

The Novas Gran Reserva Carmenére Cabernet Sauvignon is a deep ruby red in colour.

The nose is a heady mixture of aromas with black fruits and black forest gateaux, violet, black pepper and slight tobacco and toasty hints.

The palate is well balanced, with good acidity combining nicely with herbal notes, spices, pepper, black fruits, soft vanilla and a very slight touch of mint. There is a slight salinity, the texture is unctuous with noticeable but well integrated tannins and a satisfying stoney finish.

About the Wine:

The Novas Gran Reserva is made from grapes grown in vineyards in the Colchagua Valley on highly fertile, well drained Alluvial soils. The climate, helped by the Andes together with a coastal breeze, is dry with little rainfall, high daytime temperatures and cooler nights (average temperature is 22°c).

The average age of the vines is 13 years, the grapes are picked by hand and placed on a conveyor belt for a double-selection process. Firstly the whole bunches are inspected before de-stemming  and then individual berries are inspected before being gently dropped into the fermentation tanks. This ensures only the cleanest and healthiest fruits are used for the winemaking. 

Vinification starts with a 3 day pre-fermentation cold soak at 8°c. Alcoholic fermentation takes place with selected yeasts in stainless steel tanks at a regulated 28°c to 30°c with regular pumpovers. Malolactic fermentation takes place in naturally in oak barrels (50%) and stainless steel tanks (50%). The wine is then aged in oak barrels (70%) and stainless steel vats (30%) for 10 months. Prior to bottling, there is no fining or stabilizing, just a filtration through a membrane.

With 250 hectares of IMO and Demeter certified organic vineyards and a further 250 hectares currently in conversion, Emiliana (producer of the Novas Gran Reserva Carmenére Cabernet Sauvignon) is one of the worlds most important producers of Organic and Biodynamic wines.

Their spectacular Biodynamic vineyard and winery at Los Robles is a model that attracts visiting viticulturalists and winemakers from around the word. Owner Jose Guilsasti and winemaker Alvaro Espinosa enlisted a wealth of young talent to establish this project, the results of this care and attention showing in the innovative wines they produce.
